The Elqui Valley is at the Southern end of the Atacama Desert and is known for producing table grapes, other fruits and Pisco.
The elusive Chilean papaya known locally as the carica.
You can only eat it after processing...the taste is a combination of mango, pear, and pineapple with a hint of peach. Or that's what Megan and I came up with. It is very tasty but very rich so a little goes a long way.
